I'll volunteer to be a guinea pig and test them out!

I do not have a vacuum sealer but I use multiple layers of cling wrap to achieve a pretty airtight package. I am in week one of the waiting period.....next week I will try my first batch for taste. I used apple wood. I did mild cheddar and some pepper jack, with one chunk of sharp cheddar for comparison.

Using my propane smoker with just the smoker tube and apple pellets with the vents closed, I started in the mid-morning up here in the high desert when the smoker was in the shade, and it never got over 60 degrees inside it. The ability to smoke cheese at that time of day will be gone in a month or two.

"Whatshisname" from Meat Eater prefers this method a vacuum sealer. I spent money on a vacuum sealer, so that's what I use.

I met Rinella from Meateater at Tejon a few years ago when he and Joe Rogan came there for a pig hunt. They shared the cabin with us. Joe Rogan was a great, down-to-earth, regular guy and a joy to talk with. Rinella was stuck up and seemed like he didn't want to deal with us mere mortals. He acted as if we were unclean.

Tomorrow's early a.m. temperature is right, everything is in place for the smoke to start around 5:00, 0 dark thirty. 75% apple 25% cherry in the A-MAZE-N tube, 2 hours for the softer cheeses, 2-1/2 hours for the hard cheddars. Weber kettle bad!

Got to love those old grills. I've ran a couple into the ground. I'm about ready to replace mine..

G, bring your oldest Weber out to the spot. We'll char some steaks for lunch then shoot the grille into shreds. It'll be easier to throw into your trash at home that way.

You will have to pry my Weber Kettle from my cold, dead hands.

                    lol, it's a good tool

I've got the mini version too (I'd think most guys do that like this grill) it's great for camping and smaller cook outside at home.

For this smoke, I bought a new Weber kettle bottom grille, the one that holds the coals. Placed it on the top grille and blocked it up a bit with four oak 1x2s just enough to get it off of the top grille.
When done, wrapped it up in a plastic garbage bag and stowed it away for the next cheese smoke.

                        Just a heads up.
Over on Gunbroker there's an outfit called Lock Stock and Barrel that is auctioning off a bunch of Winchesters. Lots of models and calibers.
I think most of the auctions are ending tomorrow evening.

I think it was the late Duece McGurk that mentioned LS&B to us here in the MLC Roll Call thread... or it might have been golfish, one of our founding fathers. Duece knew the guys over at Gunslinger's in Covina.

LS&B is in Simi Valley, and someone there or someone formerly associated with them is a Champion SASS shooter.

                          Thanks for the heads up.

They are lever guns. The lever is just on top instead of underneath.

I suppose one could make the case that my Ruger #1 is a single-shot lever in a way, but I won’t bother the MLC with that situation.
