Yes, I keep track so I know what I have and where it’s located. I track caliber, manufacturer, bullet weight & type and of course, the quantity. I also track my reloading components in the same fashion.
Aside from my ‘inventory’, I have a few ammo boxes I designate as ‘shoot me first’ that I pull from for a given range trip. As I run low on something, I can then checkout what I need from the inventory. With the variety of ammo and calibers I have, this system works out really well for me to keep things in order. Though I don’t actually count my ‘shoot me first’ ammo, I estimate I have 2-3k of various ammo to draw from.
Like I said, this system works well for me, especially when trying to keep track of a couple of dozen different calibers.
