I sit against a wall where I can see the area where the waiters keep the iced tea pitchers so that I can look them in the eye when my glass is getting close to empty.

Agreed on windows making a difference.
I selected G1 thinking of a hotel conference room situation.
But at a place like Denny's, with windows on the front and side, I would opt for C2 since it provides a better view of what is going on just outside.

Ultimately, I would be "happy" with A1/2, B2, C2, D1, or G1. With no choice and the server putting me at E, F, H, or I, I'd take 2 and give my wife 1.. But "I" is the toughest, since 2 does not have a view of the kitchen entry, but 1 has a poor view out the front windows.

I-1. You can see the Hostess station, the entrance, and the restroom hallway. From A-1, you can only see A 2-4, maybe portions of B, D, and E tables unless you eat standing up. The people staffing the hostess station are already standing. Just keep an eye on them and recognize that "Oh Crap!!!" face when you see it, along with the entrance, and the restroom hallway. If the "Oh Crap" face is looking anywhere behind you, the door is right there. If it's directed at the door, you're in good position to play defense, if the "Oh Crap" face is at the restroom hallway it's probably yours because you're the only one with a clear view of it.

edited to add: From I-1 you also have a decent view of the waiting area. Should anyone take exception to the waiting time or quality of complimentary refreshments you're in a prime position to take them out, as well. (sarc)

Same here. In the dining room in op, I'd probably set in seat 1 or 2 at table A or B and seat 2 or 3 at C, seat 1 at tables D or E and 1 or 2 at F, seat 1 or 4 at tables G, H and I.

G1 for the following reason, most likely they are after the register and G1 is a blind spot of perp trying to rob it and it gives the view of all known ingress/egress/bathrooms. Perp would also have to discriminate more targets before identifying on you as a threat.
