Knife fighting is fast, brutal, and you both are going to be in a world of pain. Did a lot of knife fighting in the Marines, the main martial arts instructor, Sgt Maj., in Okinawa was big on it.Comment

Look for escrima (stick fighting) classes in your area if you can't find specific Knife Fighting classes. many escrima techniques translate to knives, as its the same basic movements. Plus escrima is really useful because you can turn any stick laying on the ground into an effective weapon very easily.
I train at Kovars Martial Arts, and they do quite a lot of Escrima, and some knife work. I know there are plenty in the Sacramento area.Comment

To add to the echo chamber. If a dude is squaring off with me and he has a knife and I don't have a gun. I'm running away.
I'm not interested in going West Side Story with someone in the Winco parking lot. No thanks.
That being said. If running away isn't an option, say on the ground or in another position of disadvantage, I'm gonna fight like a rapid dog with whatever I have handy.

Personally, i'd run.I usually carry a multitool and a folder every single day, but i cant imagine ever willfully engaging in a knife fight.
I'm at a disadvantage as a dad of three small kids, however, as i've been in situations where it was me standing between the threat and them, as recent as a month ago. In that case i had my folder out and ready, though, i was actively herding them back into the car as a fight broke out right in front of us in a parking lot...Comment

Knife fighting skills
I'm going to disagree slightly.
Up front, if one wants to learn to fight with a knife, take a knife fighting class. Take several. Practice.
But both fencing and any of the non-knife MAs (Aikido eventually gets to weapons) teach some useful things one would get in a knife-fighting class.
Remember the Tueller drill? Fencers see that attack dozens of times per class, just don't have a gun to draw, but a kind of blade already drawn. The first thing to UNlearn in fencing is 'linearity' - sport fencing is locked into 14 meters long by 1.5-2 meters wide, with penalties for stepping off the piste. Since one of the first things to do (if you can't avoid the whole thing) is side step the knife guy to change the attack, fencing habits would have to be broken.
The second thing to unlearn from fencing is 'one hit and stop'!
But fencing and MAs will teach footwork, distance, balance, some stress experience, and probably other things I have forgotten that apply to the situation discussed.
While they are peripherally related, the activities mentioned do not directly cultivate knife fighting skill.
I'd prefer to practice knife fighting, if i wanted to cultivate that specific skill, and not hope that theres a transference from nearly unrelated activities.
I do believe that fencing and aikido are civilian sports, and they are not suitable for fighting.
Many people have been mentioned in this thread, inay, cabales, giron, southnarc.. I believe these guys are on the right track
