I'll go slightly against the grain here.
To me, 1911 is a platform, much more than a product.
The factory 1911s are the starting point for making a great gun, not the end result. This is especially true since any of the main custom parts, e.g., barrel, slide, hammer, beaver tail, etc., require hand fitting for optimal results, which in turn yields a custom-fit gun that is miles away from the initial gun. If it were all just drop-in, it could be both done on the cheap and the resulting fit would depend on the manufacturer, not the gunsmith.
So, getting a different SA model up the price ladder is not going to yield the same result as getting the work done on a lower model, and if you plan on getting the work done to get a really nice 1911, the extra features of the more expensive model will mostly be undone and/or replaced.
I look at the upper tier 1911s only if I don't intend to modify them, or if they are already coming from a custom shop such as SVI.
