Beaver, the first time I cooked it, tasted like a cross of venison and beef. It was actually really good. As for what I'm doing with them...right now I'm going to make some sausage for BBQ's this summer and the pelts I'm going to have sent off to turn into things; chaps, hats, gloves, etc. because I'm moving to Whidbey Island in September.

Oh yeah...I got another Beaver last night too.
