There have been people convicted of the latter (some cops) here in CA.
So are people like that buying guns out of state and then selling them in CA somehow? Wouldn't that require two residencies, one in each state? Or are they buying from other people in california and then reselling for a higher price? I'm aware that some people also have had guns for so long that they're no longer on the roster and that's one way..

I'm just wondering because it surprises me how many people have off roster guns and how easily they seem to be purchasable through calguns or consignments at ffls or guns that have been taken off over time, it makes the gun laws seem really..pointless...

You are making it more obvious that you are now trolling. I listed all of the ways most off roster guns got here. And you completely disregard. You cannot bring in off roster guns if you hold dual residency. Anything you bring here, as a resident of CA, will have to go through an FFL and the roster applies. So, no, you cannot buy a pistol while living in another state, as a legal resident of that other state, and return to CA with that pistol as a resident of CA. That pistol legally bought in the other state must stay there, or out of CA.

Just dont pay for guns that seem overpriced. Unless you really want them then they're worth whatever you're willing to pay for them. So really that 1200 glock gen 5 is priced just right because you want it.

Or not...up to you what its worth

If you had a good friend that was LEO or otherwise exempt, I would presume it would be legal to tell (not ask) him that you are interested in a particular gun that is off roster and ask him what he thinks of that model (ie: a P365). If he does not have one, I presume you could say that if ever buys one and does not like it, that you would be willing to buy it off him at a fair price. Of course if I had a friend like this I would not expect to ask him to sell his unwanted gun at a price lower than what is worth or what he could sell it on the open market. I would be taking advantage of our friendship to get a deal? For me that is Not going to happen. I have posted this before but that is like asking your buddy who is an electrician to do some electrical work on your house for free or half price since you are buddies. If you are such good buddies why don’t you offer you friend to pay him double his going rate as a sign of your friendship.
