Mags are actually very important.mags are important, some after market 10rders suck.
they also require a break-in period
I can fast fire mine with 10 rounders with either bulk federal birdshot or buck or slugs and it wont jam. Using the green winchester bulk birdshot and it may jam once in a while. No real issues with the high brass ones.
I do have some slight mods, like polished the bolt, swapped in a aftermarket gas plug, and cleaned up the gas ports and made all 4 functional. But I can run it 90% reliably on the very low gas setting, and 100% if I match it per ammo.

They are the only part of the gun that I would get all snobbish about and tell you to buy the best, biggest brand name. Even great scopes can be found for far less than the average price, but not so with mags. My 1911 cost $400, but I use $35 magazines and I no longer have FTFs. Same with my AR. I basically only shoot wolf, and I don't get any FTFs unless I'm using my shi+ty mags.
I don't have experience with saigas, or at least the rifles, but I would buy a polymer mag if you can find one. At least out of the 30 rounders I've shot on my friend's ak and the 30s for ar15s, the polymer ones have worked better. Probably because you can't really alter the shape of the polymer without breaking it.Universal truth is not measured in mass appeal
