    Any good pickle canning recipes?

    Growing some cucumbers this year, never tried them in the past. But my wife likes blowing $8 a jar for the fancier varieties at the grocery store this year so hoping I can make some delicious pickles at home before I have to take out a HELOC.

    Any calgunners have good canning recipes? The amount of recipes on the internet is a bit overwhelming and I don't want to trash my cucumber harvest with inedible pickles that are too salty.

    The BALL company publishes a nice canning soft cover book. There a 100's of pickle recipes of the net. I've tried a few but decided to just shop the Fairs and farmers markets. Lots more variety than I can make. BTW try pickling other veg's e.g. green beans, carrots, cauliflower, okra, celery, (my favorite)and on and on. Good luck.-s

      Have you seen the pickle seasoning packages? Try several different things and blend to her liking. I can dig up our recipe that we settled on

        one thing I'd offer based on experience. 'most' recipes seem to specify 15 minutes if you use a boiling water bath. I'm doing okra pickles and that seems to be too long. I just tried 10 minutes in the boiling water bath and that seems to work just fine and the produce is not cooked, only sterilized.
        First batch I ran for 15 minutes and they ended up cooked, 10 minutes on this next batch they're not as dark, ie: they don't look cooked. Going to open a jar here soon and try them.

        Also, 10-15 minutes means putting the jars in after the water has reached a rolling boil, don't put them in and let them sit there while the water warms up to a boil. They end up cooked, not sterilized.

        add edit: if you want to save a little money on canning jars here's a tip. If you like & use Classico spaghetti sauce, save the jar. Soak it in water to remove the label and they do work as canning jars. They will take the thermal shock, I'm using them right now to can okra pickles.
