Get it dressed and cool as quickly as you can and it makes great table fare.

Antelope is pretty tasty. Would definitely put that in freezer camp. Prefer it over deer.

The horns though, have to marinate for a long long time, else they're kind of crunchy.

While this is important with any game animal, it is especially important with pronghorn.

The back-straps are very tender, and delicious, as is the rest of the animal.

I swear, when I opened up my first one the blood was almost too hot to touch. Their engines run really, really hot!

It's nice when it gets cold. Have hunted over a few days leading up to deer season at Oct-15 in Wyoming. Got in to some snow a couple trips. Happiness really was a warm gut pile to warm your hands.

In warm weather, we cleaned/skinned and got them on ice or off to the local butcher right away.

I hunt lake county bucks for a living

I'm pretty much trained to do that with any animal.

The hair gets everywhere. Otherwise very tasty IMO.

                          Shish kabot.

Put 'em on bamboo skewers with some pineapple, red bell peppers, and teriyaki glaze.

                          Mmmm-mmmm

I already told you! I am new to eating flesh. Then again, would that be like eating cavair from a mammal?

I'm hoping the Pronghorn is bigger and heavier than the Elk i harvested with a bullet last year.
