Randall, corn cob is better at polishing brass, it gives it a better shine. Does that mirror finish do any good? probably not! But you cant argue that corn cob shines the brass better than walnut.
But... your argument of "why does brass need to be polished more than this?" is a valid one, and the answer is, it doesnt.
For me, I started out with corn cob, I tried walnut, then went back to corn cob. The reason? I like being able to tell when the media is dirty enough to be changed, Oh ya, and it gets my brass really shiny!!!
