Well then you just answered you own question. If you do fine taking your time and don't when you go faster then obviously you're skipping the basics when you try to speed up. The basics are the basics are the basics no matter how fast or slow you're shooting.
Seems you tried to jump from a slow, focused pace to your 1 shot per second pace without going through the gradual progression of speeding up your Grip-Sight Picture-Trigger Pull-Follow Thru-ReAquire Target routine.
Instead of "start slow then go fast" it should be 'start slow, master it, then go just a little bit faster'.
That just summarizes the advice I've received from the few instructors I've had the pleasure of working with.Comment

I was actually well aware of this, and I've seen it happen myself with incorrectly loaded cast lead bullets I made. Lead buildup does happen much faster in polygonal barrels.http://en.wikipedia.org/wiki/Polygonal_rifling
