Looks like a nice quality wood, with a unlacquered raw stained finish.
Like a mild brown oak stain, medium in the brown department.
That's about what my AK looked like aside from a little more red when I refinished it and before I hit it with a clear coat.Comment

It looks like a walnut stain with either a hand oil or a satin spray overcoat finish. But if you've not done this before, you need to heed two thing:
1. How you strip down the old finish. Are you going to just cover what's there? (no), use stripper to fully remove it? strip it and bleach it?
2. However you plan to do #1, find some unseen spots inside the stock where you can test out your plan. Try 1 inch squares or equivalent to ensure you are getting the color the way you want it. If you test it out in a visible area and then choose a different scheme, you'll not be able to match it.
Or you can practice on a new piece of wood stock. You won't get color accurate results since this gun looks to be old and weathered with some drying and patina, but you'll start to see the differences in your potential approaches.
