I am really surprised evaporust took the finish off like that.

Bluing is a rust process so it should be no surprise that evaporust takes off bluing.
Evaporust is a GREAT bluing remover!

I picked up a new SP-01 so I was going to possibly put my 1994 75b up for sale. I got a little carried away with some cleaning products and took some of the finish off the slide. The whole slide is slightly duller with a patch that has most of the finish removed.

What are my options here? I think it might be their matte blue finish?

1. Sell as is? What sort of price would be reasonable with the finish issue?
2. Refinish it? If so, options? Cost?

The cost to refinish will exceed the loss you will take selling it so it's not worth refinishing it TO sell it.
A refinished gun will generally sell for less than an original finish gun too so all the more reason not to refinish before selling.
You can refinish it to KEEP it or you can sell it at MORE of a loss than a gun without a messed up finish.

I would not pay over $300 for that gun considering nice used ones fetch $450:

Was it blues or polycoated? My first CZ of similar 1990s vintage is polycoated.

The FRAMES are painted with that thick paint.
The SLIDES are blued.
As time went on, I think the slides got painted on some of them as well but not the rails.
