Its only been a week since I finished building my AR15 and I already have the itch to start a new project. Any suggestions?

If your idea of a "Project" is to just slap parts together and "Accessorize" then build another AR. You can also buy an off the rack AK, FAL, PTR91, etc and pimp the hell out of them...
If you want to Build & Learn I'd suggest the following builds:
10/22 = Good for an introduction into very basic gunsmithing. They are so easy to work on and you can learn things like bedding, changing barrels, etc... (No real special tools needed.)
AK47 = Good for developing more advanced skills still withing reach for the mechanically inclined. You'll learn riveting, pressing a barrel, headspacing, etc... AK47 tolerances are fairly forgiving and parts cheap enough for a high percentage of a successful build. (Need 12 ton hydraulic press, jigs, park tanks, blasting cabinet, etc)
FAL = Further advance skills development. You'll learn a bit more about headspace due to the intricacies of headspacing and FAL. This requires attention to barrel timing, proper torque, measuring the locking shoulder, etc.
(Need FAL action wrench, pin gauges, hydraulic press, blasting cabinet, park tank, etc)
HK Receiver/Flat = Here you'll learn/apply the skill of welding & soldering! Trunion welding, Cocking tube welding, Triple tree soldering, Weldments, FCG cage, etc.
(Need TIG welder, hydraulic press, jig if bending a flat, blasting cabinet, park tank, etc)
1911 = You'll learn how to "fit" parts! You'll truly learn patience in building a tight fitting 1911.
