I am currently awaiting my ACE sidefolding mechanism for my ACE stock, hope it kicks major azz. I hear the underfolder stocks suck for shooting, and since sidefolders allow a stock that is comfortable for shooting fold, then its kind of a no brainer. I personally see no real performance value for a Californian since you can't have an SBR. I think the whole point between the two systems is for vehicular use, IMO... A nice short barrel and the stock folded in the vehicle, and when you get out, you can unleash the stock for better control.
If I have to choose between your Poll choices, I'd go with Folding since the side folding stocks "Typically" have a better cheek weld.Comment

Since I'm unaware of any under or side folder gun that's still has an overall length of 30", I'll have to default to my extensive airsoft experience.
The underfolder such as on the AK47S is clumsy.

The underfolder results in a smaller and lighter package for carry/transport, but makes using a side optic mount impossible.
The sidefolder allows the use of optics, but is heavier and a bit bulkier when folded.
Neither are as comfy as a fixed stock, but the side folder (not wire type) is closer to feeling normal.

The underfolder is also thin stamped sheet metal- probably a bit less metal than the side folder, and the mechanism doesn't have a heavy duty pivot- it's a hole in a thin rear trunion and a hollow tumbler.
If they're made right, the underfolders lock up nice and tight, but the thin stock rails don't give you much of a cheek rest (if any).
