I think without much medical experts to speak in favor of your case, I think your best angle of attack is the religious exemption route, particularly Title VII violations. Because you are not required to have some religious authority validate your personally held belief, you can probably articulate that better in court. At least thats the strategy most of us who work for CCSF will be using.
