I run a Mesa Tactical sidesaddle on my 590A1 (8-shell). Pictures are in this thread. There are various concerns with the factory elastomer not working well if you store shells long-term in the saddle, but lots of suggestions to replace the elastomer with things like silicone RC car fuel line supposedly fix that right up. Otherwise, the thing is bomb-proof.
I'm not a fan of pistol-grip setups for the Mossberg. People who had that setup in a class I took recently had lots of problems reaching the tang-mounted safety quickly and consistently. YMMV. That said, if you are a lefty shooter, the tang-mounted (ambi by default) safety is priceless.
IMHO, these shotguns are designed for a conventional stock configuration where your thumb can reach right up and flick off the safety as you get on target... also, the bolt-release might be a little weird to reach with a pistol grip setup. Definitely train with your setup so you are OK with it under stress.
