Keep your eyes out for a Pietro Bernardelli Europa. Discontinued but formerly imported by Cape Outfitters and Thad Scott, made in Italy. Gun meets all your specs and is affordable ($500 to $1K). I have a couple and friends have several. They are serviceable and reliable. Another more expensive alternatlve would be a Ruger Gold Label, but they seem to be going for $3k +/- these days. Both the PB and the Ruger are pretty light guns and you'll feel it if you actually use 3" shells. Fabarms had a SxS a few years ago with your specs (Gold Lion or something like that). The other obvious choices would mostly be Turkish.

If you are going to use this as a duck gun, think about a Browning BSS Sporter. Rock solid guns with great build quality, but fixed chokes. Have screw chokes fitted and you are good to go. Built pre-steel shot, but I and others use them with steel, no problems.

Mossberg used to have a side-by-side, Silver Reserve I believe they call it. You might still be able to pick one up on gunbroker.com.

My colleague has one and it seems to work pretty well.

mostly 60% sporting clays/trap the rest hunting pheasants maybe waterfowl. figured that it's only a couple of years before everything hunting is going to steel.

did a Google search, found an article saying that the ruger red label sxs had problems in the 12 and 20 gauge line for "launching choke tubes down the range". that's sad for me because I'm a huge ruger fan boy. if that article wasn't too correct, please me know.

Please do not take this the wrong way.
I have had SxS, O/U, pump, and semi-auto.
SxS just would not be my personal choice.

That article wasn't too correct. You want a SxS, and the Red Label is an O/U. Choke tubes need to be tightened occasionally, and some guys don't bother. No reports of Gold Labels launching choke tubes. I have three Ruger O/Us, two of them with choke tubes. No problems. For your proposed use, you should start looking for a BSS Sporter.

Triple B just got in a new SKB sporting SxS with 32" barrels. Probably around $3K or so.

I started with a pump, owned other pumps, o/u, still have semi's that I use for hunting now. watch a lot of youtube - for European hunting/clay shooting. everybody seems to have an o/u.

I'm the odd ball of the group. maybe it's because I grew up with mr. fudd and the road warrior movies, but I've always wanted a sxs. shot a black powder one at dirt clouds thrown in the air, in the pheasant field once - that's how the guy unloaded it.

figured it'd be a handy, fast pointing, fun type of gun. other then the black powder thing, I've never really experienced one other then that. something new or sh*ts and giggles - maybe go down the path with the chiappa triple threat ?

You want a SxS, and the Red Label is an O/U.

I have been shooting with a bunch of greybeards that all own SxSs. Of course they allow me to shoot them for giggles. I fell in love with the Merkels and they guided me to purchase a Browning BSS 28" 12ga. It is overbuilt and for me really shoots no different than my semi or friends OAs. Of course some people just can't get used to the sight plane as they tend to stare down the barrels at the bead which is the wrong thing to do. Correct fit and mount is essential for any shotgun. I love my BSS and is my main clays gun right now.
