For your first bolt action, absolutely go with 308. From what you describe, the R700 is a good way to start since it's a very standardized platform. 308 ammo is readily available and this will allow you to shoot to 1,000 yards (not optimally, but it'll get you there).

Then, the .308 bolt is the standard size for most other short action cartridges so you can always simply rebarrel and have the option of many good 6mm, 6.5mm, etc. chamberings with only a barrel change.

For starters, if distance is your goal, get a variant with a 26" barrel as you'll want to get all the velocity you can from the 308.
Remington does not produce a 6.5 Creedmoor (or even their own .260 in a heavy barrel). I was replying back to someone who asked about 7mm08 as a round.

Everything else you said I agree 100% with

Get a Bartlein, Hawk Hill, Benchmark, or whatever barrel brand in a whatever preferred contour you like in Creedmoor 6.5 or . . .
Give Randall a call and the rest is a piece of cake 😉

Now regarding the rifle go for a Remington 700 5R
It costs somewhat more but it has the best barrel you can get on a 'out of the box' Remington besides the M24

And probably you might even never have to change the barrel since it's a 308 😉

If 600 yards is your limit any chambering will work.

Thanks guys, it seems 308 is the way to go. I'm really impressed with all that I've learned from all of you.

I like 308 or 223 for your intended purpose. 308 allows for more options at a re-barrel, 223 offers cheaper match ammo/reloading.
