Since you don't want a piece of combat tupperwear I would go with the SIG p220r. If you wait long enough you should be able to find one in your price range. If you don't want to wait your options will be limited to what's available now which is mostly polymer and over priced. I would wait for the panic to subside and prices to balance out myself.

I'm with you OP. Not a fan of 1911s. And, agree with other posters your best bet is the Sig P220. A nice used one can always be had for under $700, I was lucky to get my older non-rail P220 for much less and in mint condition plus three Sig mags, from Calguns of course...!

I own two P220s. A full size and a new railed carry model. I like how they shoot, the DA/SA trigger is smooth and easy to master, the size is perfect - the full size is almost an inch shorter than a 1911. The carry model is the same size as my two P229s in .40 caliber. Also, these modern firearms strip down in no time for ease of cleaning - one thing I don't miss from the 1911 I use to own.

I recommend the Sig P220. You can find them in your price range if you take your time.

                        Edit:
No 1911 sorry... all I can suggest is look for a Sig. They are about the most solid firearms I have ever used/owned.

Check out member yzernie's thread over in Commercial sales. He has a Sig Sauer P220, .45acp, DAO, CPO rated as excellent, German framed, railed, fixed sights, 1-8rd mag, comes with Sig's 1 year warranty, for $575

I too had the same criteria, I ended up with a Sig P220, although I have others, I like the feel and weight of my Sig.

I left handguns and two 1911's behind in the mid-90's... when I went looking for a .45 in October (pre-election) I settled on the Sig 220R , No regrets.. I'd buy it again.

Sig 220, Ernie has a base model wit SRT and night sights for $790 IIRC.

Another one is a CZ 97B. I had it, nice gun but no where as nice as a Sig 220 IMO.

Not sure how many other guns are on roster in CA with your requirements though. EAA witness comes in 45 and is a lot like a CZ 75 in design.
