Explain Covenant Theology to me

I've done the Google Research, but am left still with a sense of ambiguity on this topic. I am pretty well-versed in the Bible, and I understand quite well the difference between the OT Law (the Mosaic covenant, I guess) and Redeeming Grace through Christ, so can someone help me understand what else there is to covenant theology? When I've asked friends who are adherents, all I seem to get is "read Rushdoony". And while he may (or may not) do a good job, I don't want to add another to my stack of books I'm wading through currently.

It basically says that there is one Covenant People from Adam through Christ. There are no dispensations of different covenants.
