If they are your firearms and they are CA legal, then no.

I'll be driving to California this weekend, and will bring a 1911 I purchased while I lived in Cali; I take won't be a problem as longest the magazine is within legal limit, and locked?

and make sure that there is no threaded barrel.

In a locked container (I use a Briefcase). Unloaded.
Ammo can be in that same container just not inserted into
            the magazine well. Or chamber.

That locked container can be anywhere in the car.

So if they are off roster and you take them out of state, are you saying you can't bring them back?

                  No.

Off Roster is not 'illegal'; the Roster affects FFLs and to whom they might sell.

So long as California has no basis to consider you as a returning resident, it's actually advantageous to you to bring in all of your lawfully configured off-roster handguns (just don't buy any new one's for this purpose - you'll run afoul of dealer laws). You'll find that the value of your collection will increase significantly once you become a California resident and are able to lawfully transfer them via PPT.
