I thought triploids/hatchery fish had their adipose fin lopped off? Or was that just salmon/steelhead? And this sort of thing is supposed to be my specialty....

Only hatchery Steelhead and Salmon. But even than, not all. Hatcheries leave lots of them unclipped in order to ensure adequate broodstock on rivers that don't allow harvest of native fish.

That and I believe it only pertains to state hatcheries. Private hatcheries typically don't.

Exactly. Lots of Tribal Hatcheries don't clip because they can net and retain clipped or unclipped fish, hatchery or wild.
