    Venison Recipie?

My uncle gave me a couple Venison steaks I'd like to cook up, but I've never cooked venison before. My uncle said to soak it in milk overnight, then cook it with whatever seasoning I like on steak.

Anyone have some favorite recipies for me to try? I'm going to try and get myself a deer next year, so I'll be able to try more. Also, how long do I cook it for? I have been told not to cook it on as hot a flame as beef.

Never soaked a piece of deer meat in milk in my life. Not that some don't!

However, depending on the thickness,(thinner is better for me) I prefer to get the flame as hot as i can. This scorches the outside to prevent loosing juices inside. Convection oven theory! Cook em hot and fast with the meat still red on the inside. Anything else will turn it shoe leather IMOH. Its also important to note that a lot of this depends on what cut of meat you are using. Did he tell you? Some "steaks" are better used in stews, chilis, or cut really thing and pounded for meals like scalapini.

If there is anything white on it, cut it out prior to cooking. fat, bone, sinew, silverskin, whatever...

Take thhseacows advice. It will taste like poopoo if you leave any of it on. I cook mine if in steak form high, fast, and close to rare. I have also "chicken fried steaked" it, turns out good. A roast I will BBQ it, again don't over cook, it will ruin it. Also remember it is LEAN so becareful.

Yeah like the other guys said. The simplest way I do it is to pan fry it with a lil bacon grease or evoo. Throw in some veggies/onion/mushrooms/artichoke hearts if you like

I don't have any old bacon grease around, but I'll try it on high heat. 3-4 minutes per side, then let it sit for a few?

There is not really any set time, it all depends on the thickness of the steak. You just want the middle to be pretty rare(I like mine to be VERY rare). I wouldn't let it sit for very long either, as it will continue to cook after pulling it off the heat. I prefer a few drops of olive oil to bacon grease, any day.

As for soaking in milk, it will pull all the game taste out of the meat, right along with the natural venison taste. So, if you don't like the taste of venison, soak it in milk.

Dood you didnt mention you got a slab of steak!

If you do, this is what I do:

Rub med grid salt on steak, put Tons of black pepper as if the entire meat IS black pepper. Turn the plate on EXTREME HEAT or HELL Hot (jk). Dash a little olive oil on the plate and once its hot hot, slap that baby on and watch it sizzle. Flip over and do the same.

Im not mention minutes because it all depends on how thick and how rare you like the steak. We do this with the tenderlion

Skillet. The oil keeps the black pepper stuck on te meat like flower.

Hey guys I found a big *** Elk Roast in my freezer yesterday. It's my last piece of Elk left so I really don't want to fubar it.

                              Suggestions?
