What's the meat yield on tuna? Yellowtail?

    For the salmon carcass, I usally smoke the carcass, flake off the meat and use it in chip dip. Buddies BBQ it and make salmon fried rice. I don't leave extra on the carcass for this. Why would I do that?

      When I say leave on carcass I mean 5%-10% of meat. I can fillet a fish paper thin but the best meat is on the spine. I often give away fillets and grill the bodies and collars. I just prefer the center cut meat. When you get limits of large fish you can be picky.

      For salmon we would save all the carcasses and scrape them to make salmon cakes. Add panko, green onion and egg and fry up. Best parts of the fish.

        I love to go fishing...I don't like the taste of fish.

        My fish loving friends constantly ask me when I'm going fishing again. They know they are gonna benefit!

        As for meat to total weight ratio, meh, I don't eat that stuff so I have no clue.

            Iv'e always found it strange that people have decided they don't like fish.
            There is such a variety of what different fish taste like.

              Just because I don't really like fish doesn't mean I haven't eaten any. I have tried many, many different species of fish. And I will eat it on occasion just to say I've tried it and I don't have to eat it.

              I've never tried a fish that didn't taste like fish.

              And to clarify, I do like some shellfish. Lobster, crab, shrimp. If I'd didn't occasionally get gout, I'd eat that stuff much more often.

              But all fish taste like fish to me...and I'm not a fan of that flavor.

                  % yield on a school sized tuna or paddy YT is about 35-40% non-gilled/gutted weight. Yield % goes up when the tuna get bigger because they get round, and the surface area/volume ratio starts to shift.

                    Fair enough but i think if i had a slab of grouper to grill for you you would see it differently.

                      I think the blood line in YT contains more fat than the blood line in tuna. I always leave it in YT, but remove it from tuna and save it for lobster bait cages.

                          It goes like this, for every pound under 20lbs whole you get 9.3876lbs of meat. For every fish 30–40lbs you get 26.6734lbs. Every fish between 41-50lbs you get 36.674lbs of meat. This all depends on water salinity. If the adverage salinity is 45.453% you subtract or add .783% to the total weight minus the tide footage at the time you cought the fish. All this came from the NOAA website fishery website and is s is scientifically proven through the California dept of fish and wildlife.
