Nice. Sheepshead is good eating. They call it "poor-man's lobster" but I kinda prefer it to lobster, if done right.
But that calico is the real tasty treat in my opinion. Best fish on earth if done right.Comment

That is some tasty eating there. I have only caught one Sheephead and it was worth 75.00 in the jack pot on a 1/2 day trip in Santa Barbara.The best part of hunting and fishing was the thinking about going and the talking about it after you got back

I use to spear a lot of them. They are a courser textured meat and can be hard on a knife when cleaning them.
We liked to wrap them in foil(sometimes no foil) and bake them with cut up carrots, potatoes and onions with plenty of pats of butter.
They are good eating but I still prefer lobster.A 30cal will reach out and touch them. A 50cal will kick their butt.

Steam it and season then serve with drawn butter

Fillet,
make a stock out of the carcass and boil it. (not too long)
There are a lot of recipes online,

Last time I was at the Monterey Bay Aquarium an older Italian tourist and I were each doing our best Italian/English conversation when the gentleman pointed to the Sheephead and said they are great with olive oil, garlic, and tomatoes..

As Divernhunter said they are easy to spear. I speared hundreds of them in the 1990's, but I also just cooked them up like all the other fillets. They were great like that so I'm not sure what I missed.Comment
