    Elk tenderloin recipes/ideas

    So normally I either grill or bake the tenderloins and serve with mixed veggies, but I'm looking for different ideas and recipes just to mix it up from the same O same O.
    Post your ideas, favorites included side dishes and such.

            Lightly salt,pepper bring to room temperature. Sear it in a cast iron pan. And serve with horseradish and jack.

                Well I couldn't post for a while obviously, but did the olive oil pan seared deal, seasoned with herbs de providence and cooked to barely hit medium rare. So tender and good. Thanks guys.

                    Elk scallopini with juniper berries over crab infused whipped red potatoes. Veg: Garbanzo beans chole (curried garbanzo beans). Salad: deconstructed ceasar salad. To drink, a nice refreshing Beaujolais Gamay.

                      I like to marinate elk in teriyaki sauce and cook it on the grill. Soy Vay is my favorite brand.

That's more traditional scallopini I'll admit but I think the juniper berries will have a better aromatic effect if used properly (Properly is exceedingly sparingly and they must be used properly.                               Tossing out the crab infused whipped reds for glorified garlic fries though, that's just sinful. Proper dungeoness crab leg meat shredded and whipped with a hint of garlic into mature red potatoes with teeny bits of potato skin still in the mix is the .45acp JHP to them french fries 9mm FMJ.

                              The substitution of greens for the chole is an odd one but I won't gripe other than to note there are already leaves of plants being served so a different vegetable is called for. It's a forgivable transgression. Not everyone likes curry, but then again, not everyone is sane either.

                              The wine, well I like a good Syrah as much as the next guy and if you're going to ruin the wonderfully created flavor layering anyway wee might as well go with a domestic wine.






                              The above was written with tongue firmly ensconced within the cheek while being very much serious at the same time. If anyone wants any of the above recipes please PM me. Preparation for the whole thing takes a couple hours. It should be served as courses with something like a blood orange sorbet as a closer.
