    Storing Dehydrated Vegetables

I am currently drying some zucchini and yellow squash in the dehydrator.

What is the best way to store it? Vacuum sealed bags? Jars? ??

A lot of good info here at dehydrate2store.com video section.

For short term everyday usage she uses canning jars and an O2 absorber, for longterm storage she uses mylar bags, vacuum pack and O2 absorbers.

I vacuum sealed mine in glass mason jars. I have the adapter to use for my vacuum sealer (Food Saver brand). Another way is to use small mylar bags and put O2 absorber before pulling a vacuum in the bag. I second the mylar bags for longer term storage.
