    Any one have a good pickled egg recipe?

    I found a few online but want to know if you guys have a good tasting recipe?

    I've never even had a pickled egg, but I'm willing to try one.

      Here's one that I make. I myself hate pickled eggs, but my wife and mother in law swear these are best they've eaten. These are a southern style pickled egg. A lot of the northern style eggs add mustard to theirs.

      24 eggs
      6 cups cider vinegar
      2 tbsp black peppercorns
      1 tbsp allspice
      1 tbsp garlic powder
      1/2 tbsp coriander seed
      1/2 tbsp cardamom seed
      1/2 tbsp clove
      10 red peppers (I prefer Thai Bird Peppers, which are very hot)
      3 tbsp sugar


      Boil eggs in simmering water for 15 minutes.
      Place eggs in cold water and remove shells.
      Pack into sterilized jars.
      In a pot, combine vinegar, spices and sugar.
      Bring to rapid boil, reduce heat and simmer for 5 minutes.
      Pour hot liquid over hard boiled eggs.
      Place lid on jar and store in refrigerator when cooled for 3 days before eating.

            Yet you always used to see them out on the shelf in bars in the south. Shudder....
            Mine are in the fridge. Though they never last longer than a few weeks, I'm told a month is good, 2 months is pushing it.

              I take a brine that is 12 cups water 4 cups distilled vinegar and 2/3rds cup pickle salt. take cold eggs from the fridge and put them into boiling water for 9 minutes (not a second more) then plunge them into ice water and cool them down then peel. at this point i make two different types of pickled eggs. in jars i put the peeled eggs. in half of them i put about a quarter cup of fresh home made salsa. in the others i put bay leaf, peppercorn, corriander seed, garlic cloves, all spice and a few slices of raw beet. boil the brine then let it cool down. cover the eggs in the brine and put the jars in the fridge. will be good to go in a week. these are fridge only eggs. eat them all within two weeks. if you want to jar them it's a little more difficult and i havent perfected it yet

                I saw one from Emeril that was eggs with beets. One of the pickled eggs I've seen had a hot pink yolk, is that from the beet?

                  Yeah I can remember seeing them at the corner store sitting on the shelf and at the bar sitting on the counter for days. No one ever died that I knew.

                    The US is the only country that keeps their eggs in the refrigerator. I will use eggs MONTHS past their expiration date, and they taste just fine.
