Canned Food: Sardine, Tuna, Fish Fish fish, vienna sausage...that's it?

    I just ordered some kitchen gadgets from these folks and while I was at it I got the "sample pack" of canned meats (Beef chunks, ground beef, pork chunks, chicken chunks, turkey chunks) and a can of the Yoders bacon.

    It should be here this week. Will report back after I've sampled it...

      Have you had any experience canning your own meats? With the ribs do you add any other liquids to the jars prior to pressure canning them, or do you just fill up the jars to the same level as other canned items? How about shelf life? The older lady that I bought my pressure canner from used to can salmon every year, but hers was always eaten within 12-18 months.

        Underwood deviled ham, Underwood chicken salad, SPAM, corned beef hash....

        You can also look in ethnic stores for canned food. Germans are big on preserved meats.

          You can speed up the process by just smoking them to cook them, then wrap them in foil, then put them in the oven at about 300 degrees for about an hour.

          That will lock in the moisture and the ribs will self braise.

          I have done it that way, and I have also done my own braise and added that into the foil with them while in the oven. It doesn't make a difference in taste. And this way is more of a mess because there's more juices.

          After doing it this way, you'll have a hard time handling the rack. They aren't just "fall off the bone" the bone literally slides out from the meat.

            I have some canned rattlesnake that I bought at Ralphs last year! I also have canned shredded chicken, found in the tuna fish aisle. It's great! I have canned ham too.

            For beef, I've never seen it canned, so I'll just improvise.... A-1 Steaksauce poured all over a plate of stray cat or dog tastes like...... Well, tastes like.......... CHICKEN!!!

                      Costco sells canned chicken. There is also Spam!

                      What about stuff like canned chili, stew and soup? Those would have some options with beef in them.
