    Dehydrated jerky and stew completed

    I got brave tonight and made some dehydrated stew. Basically I browned some chuck meat, put it in a cast iron crock pot and baked it with two cups of water. I boiled the browning mixture out of the pan and poured it into the crock pot. I gave the meat 1 hour at 400f. I then added more water and dehydrated carrots, celery, mushrooms, potatoes, sweet potatoes, onions, bell peppers and seasoning. I cooked it at 350f for 1.5 more hours checking water content every 30 mins. Man alive the flavor was incredible. All the ingredients tasted so much better. Tons of flavor and probably the best stew I have ever made.

    I also got up early this morning and put my marinating beef sliced to 1/4 inch in the dehydrator. I set the oven to 155f and allowed the jerky to dry for 6 hours. The jerky came out great. I posted the recipe in another thread. I am more than pleased with the way this food dehydrators works. The food rehydrates very well and tastes great. Perfect for long term storage. Just add water and heat.

    Nice. Next time rehydrate your jerky and use it in the stew instead of chuck meat. Have yourself a 100% rehydrated stew!
    I used your recipe for smoked jerky, wow was it good. 2 pounds of london broil was eaten quick. I'm marinating rabbit saddle as I type, thats next. Thanks for your recipe!!

      I modified the jerky recipe a bit.

      Cut pineapple juice concentrate to 3 tablespoons.
      Upped white pepper powder to 3 tblsp
      Added 1/2 cup red vinegar
      Upped 1/2 cup soy sauce
      Upped onion powder by 2 tblsp
      Added 1/2 cup water
      Deleted apple juice
      Added 1 tblsp ginger powder
      Upped garlic powder by 2 tblsp

      Basically I mix till it tastes good then add cut meat and marinate 24-48hrs.

        Just got my Excalibur yesterday; I'm off to CostCo to pick up some flank steak and try a few different jerky marinades. Yours is on the list to try!

          Try pineapple. When it dries it tastes really good.

              I finished up some goose jerky last weekend and did some orange slices yesterday. I have the same dehydrator and it works well. Clean up is easy as the nats are dishwasher safe.

                Made our second batch of Jerky in the Excalibur I picked up at a yard sale for $20. Yum. I will try your recipe. I would love more tips on using it.
