I'm thinking of a good Japanese, layered steel kitchen knife---say seven inches long---super sharp---available in the L.A. area---maybe $200 +/- or so---any ideas?

you know SPYDERCO,great as a kitchen knife....she now has a 4" serrated and straight edge,6" serrated and straight edge ,bread knife,and a Santoku the grip is great non-slip.They discontinued the a while ago and my daughter took them when she moved out and have been looking what to replace them with,now I don't have to.....Happy Wife ,great dinners...http://www.lapolicegear.com/spyderco...ity-knife.html...Comment

That is an amazing value at $30, I love Spyderco knives.
OP: you should also consider Morakniv. Made in Sweden, 14C28N Sandvik steel

The knife that gets used most in my house is a Chef's Knife I made years ago from a blank, but the blank seems to be off the market now
The blade is 1095 HCS and I think it was made by Russell Green River Works.
I can find other styles on Track of the Wolf, and other sites, but not the Chef's Knife style/type.
I looks like RGRW's 6" Cartouche Blade, but in a full sized 8-10" Chef's Knife profile

Did someone miss out on the 90's "Ginsu" knife?
That said, what is wrong with Cutco?
More than a decade ago I had a few(you don't NEED all of them), I never actually needed to sharpen them, my ex ended up with them.
I have a few currently and the best I have owned.
They will sharpen them for free, IIRC, lifetime warranty, and made in USA.Comment

I just bought my wife a set of Kramer By Zwilling Eurolines.
They fit the hand like no kitchen knife I have ever seen, they use steel that really works well at retaining an edge and at corrosion resistance, and they are beautiful. Thin blades, tapered tangs, and the balance is perfect. The knifes handle like an extension of your finger. The five piece set with a walnut block and steel costs $850. Don't get the Eurolines mixed up with the carbon series (I'm not sold on carbon steel in the kitchen) or the stainless Damascus series (twice the price of the Eurolines for what?)
