It really depends on the steel. You can have a narrower angle, but if the steel isn't hard enough, it will dull easier.
Do you know what type of steel your blade is made of? Also, what sharpening system do you have?Don't under estimate the power of a letter.

If it's carbon steel, then I would agree with you that 25 degrees is a great angle to maintain a working edge on the blade.Don't under estimate the power of a letter.
