Is there a legal way for me to build another p320 this year? I know the laws have changed and they are confusing to me. Can anyone help clarifying? Thank you

Short answer, no.

This is unless you plan to keep it as a single-shot, bolt action pistol.

Sure.
Just apply for a serial number through the USNA process and then build your single shot P320.
It will have to stay configured as a single shot.

From DOJ:

Effective July 1, 2018, pursuant to California Penal Code section 29180, the sale or transfer of ownership of a self-manufactured or self-assembled firearm is prohibited. Accordingly, commencing on July 1, 2018, the DOJ will not accept a Firearm Ownership Report for a self-manufactured or self-assembled firearm. The possessor of a self-manufactured or self-assembled firearm shall submit a Unique Serial Number Application (USNA) via CFARS to be issued a unique serial number by the DOJ. If the USNA process is completed successfully, the DOJ will record the firearm in the applicant's name.

You can no longer vol-reg a semi-auto handgun that you built prior to 2014.
You have to use the USNA process now.

USNA is only going to be for single shot pistols as semi-auto pistols are all deemed unsafe unless on the roster.
It's not possible to build new semi-auto handguns in CA unless you incorporated a magazine disconnect, loaded chamber indicator and microstamping and submit 3 samples for drop testing and pay the $200 fee to get it on the roster.

The drop test fees run in the thousands of dollars plus the cost of the 3 guns.
Then it's $200 per year to keep a model on the roster.
