I was given a Lee 2001 press used in the box and I'mnot quite sre how to set it up. By means of height dies adjustment.

    Press setup

Sizing die: Raise the ram; screw die down until it touches the shell holder; lower the ram very slightly screw die down to again touch shell holder. With shell holder applying pressure on die...tighten the lock nut.

Seating die: Raise ram with case in shell holder; screw die down to touch case; back die off a couple of turns; tighten lock nut...use small screw to adjust seating depth.

Probably clear as mud. I'm sure others will offer better explanations.

The important thing to remember is that the depth of your sizing die will determine the amount of shoulder "bump" placed on the case. This is important because too much bump will give you excessive headspace. As mentioned, the typical methodology is to screw the sizing die down until it touches the raised ram, then lower the ram and screw another 1/4 to 1/2 turn. You can mark case necks with a sharpie to see how far the die is sizing the shoulder.

You do have a reloading manual right?
This should be very well covered in a good manual.
