Match grade is about how consistantly you can load each round.
    That is:
each bullet weights the same with same demention.
    Each primer are the same.
Each brass is the same spec.
    Each powder is exact.
    Each process/step is the same.
    What else am I missing??

Hehe but you get the point.

Most importantly is when doing all of those things the end product should be very consistent from shot to shot. This improves the chances of shooting very good groups and being able to use calculated dope for certain conditions if your capable of doing so.

Question is, can you shoot well enough to get the benefit of match ammo? Its not the magical ragged hole formula. You have to shoot tight to make groups tight.

ic. will the single stage press better on the consistency because of less moving parts?

'Match Grade' to me means all of the above AND that particular load consistantly shoot within the X-ring or 10-ring of the competition thru the gun you're shooting. Of course the gun has to have the mechanical accuracy to hold it.

MY match guns can do less than 2" groups at 50 yards. I load my own ammo. So my rule of thumb is, I have match grade ammo if my match gun can do 3" groups at 50 yards rested.

Is this with a pistol or a rifle?

Match grade is nothing standard and it largely a marketing term used to convey more refined quality control in that ammunition versus others that deems it necessary to charge a premium over other ammunition. Whether the refinement takes place is another matter. I've seen a lot of "standard" ammo shoot a lot better than "match" ammo.
