I stocked up pretty heavily when I decided to move to California 7 years ago and in the time living here Ive been pretty heavy handed with the mouse online so needless to say I have a ton of ammo.

I take my ammo out of cardboard boxes and put in 50 cal fat cans with a desiccant as soon as it comes in.
Take my label maker and put amount ( usually 1000 per can ) and type of ammo then its put into a giant metal rigid work box. Ive got two of them bolted down for ammo alone.
Then add it to my list. The list is kept in two places, on my computer and a hard list thats on paper.
The rigid boxes can store up to 25k per box if you tetris it right when loading them. Just the weight and being locked and bolted down is a good security.

My storage area is not at my home so at home I keep a small amount of ammo to shoot with weekly. I don't usually keep track of that ammo as closely.
The 50 cal cans have their tops spray painted yellow and a label of what it is put on it. When the can is empty I head to my spot, take out a fresh can and order more.

I am at a disadvantage now since I am moving out of state in the next 10 months and moving the amount of ammo I have will not be feasible, or cheap. And selling it might be an issue.

Ah, Gotta love this crap whole state.

I like the idea of ammo can with blue painter's tape.

I bought a silver sharpie and write the caliber on the cans.

For new stuff, I try to store it in the box, and then inside an ammo can.

For reloads I use heavy zip lock freezer bags in qty of 100. Bags then go in ammo can. Makes it easy to count that way.

For 12 guage, I store it in the 250 round case/flat. If open, I store it in the 25 round box

I tried the freezer bags , but cases started turning green , cartridges rolled out of bag and into dirt .
Now we fill magazines before and the person chasing the M I's also refills the mag from plastic boxes .

You spelled "iPhruity-tracking via (NSA-friendly) iCloud datastores 'that you have to pay for'" wrong.

I only keep track of powder, primers, and 22lr. I have 9mm and .223 cases galore, as nobody seems to want them at my range... so we always come back with more than we brought, and additionally some .45 ACP cases for a coworker.

Now .38 and .357 I am doing single-stage right now, and have ~185 empties of each, but the powder measure should be arriving soon... and I'll make sort work of those.

I don't usually have that much loaded ammo, maybe only a few thousand rounds total of the 3 calibers I shoot most. But I wrote a vb.net app to keep track of my reloading components, put the actual db on my server and with a quick PHP app, I can see what I have anytime I want, so if the gun store has a sale on something I can look up on the web and see what I have. The actual data entry/removal/etc. can only be done from my computer. Its a pain, and would not work for someone that does not have a server to put the db on. I had big plans for this but i quit working on it.

I never actually counted the bullets or anything, I just logged how many boxes I had and a guesstimate on boxes that were opened, with 1/4 full, 1/2 full, etc. that was close enough for me.

The problem with inventory management is the maintenance, it becomes quite a pain after a VERY short time and then the whole thing gets out of date. I so badly wanted to incorporate a scanner and IUC label printer, but those are ridiculously expensive.

ammo cans 50 or fat 50's, vacuum seal in 20,50,100 round lots depending on caliber with the lil moisture packs
thrown in for the longer storage. Picked up those little label holder things from Staples, slide it out and put a
new one in. Spreadsheet somethings, but use a database app, like some one else mentioned but it is sometimes
time consuming, so 3x5 card with the ole fashion handwriting

To count my empty cases on hand, I weigh them on a bathroom scale and divide by an average weight of a single case to get a good estimate.

For example I am showing about 4500 .223 cases after weighing them. If I am off by 100 I don't care at that amount.

You could do the same thing for loaded cartridges.

For loaded rounds I keep everything is in boxes of 20, 50 or 100 so I can keep count.
