So I found a free, perfectly working PowerBook G4, 512mb system ram, 1.4 ghz power pc. I've been looking around, looks like you can load some kind of Linux in it , which would be the best?

Ubuntu 12.04 for PowerPC - probably your best choice depending on your skill set
Debian for PowerPC
YellowDog for PowerPC - based off the redhat distro
Solaris 2.5.1 if you want to go hard core.

The last version of OS X to support Power PC was 10.5.x. Apple doesn't really announce EOL, but I don't think they've issued a security update for 10.5.x since 2012. I don't there's any inherent OS vulnerabilities in 10.5 that are known, but it's probably safer to run Linux so you can just recompile your own kernel as patches are issued.
