We need to stop perpetuating the myth of "scrounging" ammo. If I told you right now, to go find me some ammo, where are you going to find it? Businesses which stock ammo will likely be sold out. And we all saw what happened to ammo during panic buying. Anyone who has ammo privately will have guns for it, so taking it by force won't be a feasible option. It would come down to friends, family, and acquaintances you know has ammo AND is willing to trade for it. What will you trade in return? Food? Water? Unless it's something like booze or smokes you're offering, you need everything else.

If you're worried about possibly running out of supplies and having to bug out, then prep more. There's an old saying that's existed since war itself: You fight with what you've got. That's why the better prepared side almost always wins.

Nope. All ammo would be looted in a matter of hours.

As a primary gun, I would be taking my AR, but as a sidearm, what would you all feel as most idealistic (shootability, reliability, etc set aside):

            -SA XDm .40
            -Glock 20c 10mm
            -HK VP9
            -Sig P229r .40
            -Sig SP2022 9mm
            -SA TRP .45

Also, if any of you could point me into the direction of some good (and not too pricey) plate carriers/battle belts, that would be much appreciated!
You want a low profile plate carrier, all those high speed messes with 200 molle attachments and velcro and etc etc are a huge PITA to put on and off. Not a 'quick reaction item' at all.

Most guys who know what they are talking about (and dont work for plate carrier companies) will tell you a minimalist design is best. Have a seperate chest rig for mags, IFAK, tools...etc.

As far as best handgun in SHTF, find something that has plentiful ammo and standard cap mags (assuming your bugout location is out of state). If you are bugging in, a Sig 220 with 10 round mags is hard to beat.

I'd bring my Glock 22 as well, but I think I'd bring a 9mm for increasing my chances of finding usable ammo. The fotay is a nice touch, but I still think 9mm far outnumbers it.

I used to have multiple pistols on the family bug-in/bug out plan. It used to be: 1911 .45 ACP for me, glock 17 for the wife,
M&P9 FS for the oldest, sp2022 9mm for the middle, P22 for the youngest.

But over the last year I have updated/consolidated my pistols so that other than the P-22 22LR for the youngest all are now 9mm pistols. it now looks like this:
M&P9 FS for me (or Browning HP 9mm if the M&P took a dump), Glock 17 for the wife, Sig SP2022's for both of my oldest daughters, Still the P-22 for the youngest but also have the option of giving her a M&P Shield 9. It made ammo consolidation somewhat easier too as I have over 3K of 9mm on hand with the ability to load a few thousand more on my Press.
Long guns are covered as well but that is not the point of this discussion.

Why the Sig SP2022 hate? Both of mine are 100% reliable and about as simple a pistol as it gets. The trigger takes a little bit of getting used to but both my daughters shoot em like champs, and one of them is my bedside gun when the daughter aint shooting it

That's definitely a tradeable commodity right there.

By all means, please elaborate on this statement. My SP2022 is my current bedside gun and I shoot just as good with it as I do my 229. Just because it isn't the most popular pistol out there doesn't mean it is sub-par. In fact it is highly underrated.
