Summary: The Mark VII's used different slide & barrel sizes per caliber so to do a caliber conversion you need the appropriate slide, barrel, bolt, and magazines.

With the Mark XIX all calibers are built using the larger .50 slide, so you can convert any caliber to any other caliber by changing the barrel, bolt and magazine; the slide is now the same for all calibers.

IIRC the improvements between the Mark I and Mark VII were the addition of the 2-stage adjustable trigger and larger "hooked" safety levers and a larger slide release.

The Mark VII Desert Eagle .357 Magnum pistols are convertible to XIX. The conversion kit (part #CONV…..) consists of a complete slide assembly, barrel, gas piston, recoil spring assembly, magazine and grips. Is a costly conversion.

There is no differences, same as Mark XIX. What happen was when we first produced the .50AE pistols we called them the Mark VII series, but as we changed the .357 and .44 to share the same slide assembly as the .50AE we decided to call this series the Mark XIX.
