What happens if you buy a gun at a gun show (Fred Hall)? How do they do the waiting period?

Waiting period is still 10 days.

If you buy it from a dealer, you process paperwork @ the GS and pick it up from the dealers location/office/kitchen table after 10 days.

If you buy it from a private individual, you walk over to the FFLs table (usually in the corner by the entrance), find one close to where you live, and process the paperwork. The gun will stay with that dealer until you pick it up 10 days later.

The PPT fee at most shows will be higher than the "standard" $35 total...Just a heads up.
