I am thinking about giving Duracoat a go and see how it turns out on my P225. My question is, am I supposed to apply the paint to only the outside of the slide and frame, or outside AND inside the slide and frame?

You apply the coating to wherever you want the new color to go. I imagine you would need to be careful if applying inside inside the of the frame, slide and magwell.
I would say outside is probably good enough, the inside may take a lot of work to do correctly. -
