No HSC in HD situation

My girlfriend doesn't have an HSC but does sleep with my 1911 beside her at night. If the zombies come and she has to use it, would there be any problems with not having one?

She should be fine. If zombies came, having taken and passes a safety test would be the last thing authorities would worry about.

HSC is for buying or being gifted. Possessing a handgun with an HSC that expired 20 years ago is no problem, the wife/daughter/son/etc using your handgun is not a problem.

If it's at her house, where you don't reside, if they are trying to be really anti then they could try to charge her with owning an unregistered pistol. Just a thought.
