I think I'd like to try a 2-gun competition, mainly for fun but also to perhaps pick up some shooting tips. Rather than buy or build "competition guns" I'd like to shoot the guns I have for conceal carry and SHTF/home defense. Namely a CZ Rami 9mm subcompact with a red dot, and a Saiga AK with a red dot. I know that there are strict rules and divisions in these types of competitions. So I guess I'm looking for 2-gun matches that would have an "open" or "anything goes" or "outlaw" division. I don't care about winning, just want to improve and have fun. Preferably north of San Francisco. Can anyone point me in the right direction?

Open is pretty much anything goes.
Generally you can shoot any gun within basic limitations (handgun has to be a handgun, shotgun has to be a shotgun, rifle has to be a rifle).
I believe you might have an issue if you tried to shoot a single shot in any of the categories, but otherwise you're probably good to go, -
My first competition I used a Glock 23 and a Saiga with an aim point comp m2 on it. And a Remington 870. I had a great time! My rifle was zeroed at 100 yards. Hope this helps. Those 10 round magazines fit perfectly in cargo shorts too!
You’re going to have a great time. My second match wasn’t as fun because the magnet man came around and thought I had steel core ammo. So I couldn’t shoot my rifle. Lucky for me someone let me barrow their Ruger mini to finish the match. Good luck and have fun!!Comment

Practiscore is a good place to find matches. You can search by keyword and filter results. I know that there is going to be a 2gun match in Fresno in September.
I don't think you have to sign up to view the search results. Here's a link for a search with "2gun" with a filter to only show CA matches.

You have the right mindset. Find a match, shoot what you have, figure out how it works, get better. If you like it and want to get competitive, you can set up a competition rig. Or, you can keep shooting for fun with your everyday gear.
Practiscore is a good way to find out sanctioned matches, but there might be others that don't use Practiscore. Also, not all Practiscore matches are open to public and not all of them follow the same rules.
Another way to find matches is to find shooting ranges in the area you're looking for, then go to their websites or social media to see the schedule. They will list all sorts of activities and matches, with names and contact info for the organizer of each event. You can contact range with any question about events you don't see on the schedule. By going to the range directly, you'll be able to find all the obscure non-sanctioned matches that might interest you.sigpicNRA Benefactor MemberComment
