Where the form asks for a business type, am I okay putting down "Collector?" Collecting firearms is purely about a hobby: I've no intention of stocking anything or picking up firearms for later sale.

My concern is partly because I already applied for a 03 FFL and I don't want to give the mistaken impression to the BATF that I plan to go into collection as a business.

If you are getting the COE to use in conjunction with a C&R FFL, then put down "Collector" for buisness type.
