I have a set of old school lockers, the tall variety, that are bolted together side by side. One could put a padlock on each door or a single locking rod through all of the door locks. It's full enough that it'll take a forklift to move.I'm retired. That's right, retired. I don't want to hear about the cop who stopped you today or how you didn't think you should get a ticket. I haven't done this, but I've always liked the idea of using old school lockers, the ones that are just for books, not the larger gym lockers. Each compartment would be for a single caliber. Only catch is they are not air tight, you using desiccant would require some sealing work or using sealed containers inside of the lockers. But that wouldn't be a deal breaker for me if you wanted to keep everything dry, it wouldn't be too hard to implement.
You can look on the California public surplus site and see if any schools in your area are trying to rid themselves of some.

Job Box. Mine are packed with ammo and do not sag. I put wheels and mine.
A double height would be even better. Same footprint , twice the capacity or more room so you dont have to partially unload to get what you want at the bottom.

You may be able to pickup something like this or other stockroom shelving if a retailer near you is liquidating. A buddy of mine picked up some for free from a Target years ago because it was out behind the store and he asked the manager who said he could have it.For sturdy shelving, consider used pallet racking. It can support substantial weight.
Most surplus outlets, etc., want obscene prices for the stuff. I got lucky and scored 24 lineal feet for free. I just had to drive about 5 miles to pick it up.
For security, you would need to enclose it (build a room around it?) or use cables/chains with ammo cans.Comment

I have seen large non-working refrigerators used. A good hasp and lock will keep most out. Determined thiefs will try harder.Comment

My buddy re-purposed an old coke dispenser machine.
They have a heavy duty lock for the front door. Puts his duty gear/battle rattle and a few hunting rifles along with a good supply of ammo.
