So, every holster I own for my semi-autos covers the trigger guard/trigger, yet several of the ones I have for revolvers don't...they specifically, by design, have a cut-out so the trigger is exposed. Any idea on why this is so?

It would seem that most modern holster designs do cover the triggers.

While older ones may not. DA revolvers have a long trigger pull so that is the intended safety feature. Hammer blocks would stop most misfires from falling without the trigger pulled or the hammer being pulled back slightly by brush or limbs.
Single action revolvers do not need trigger covers. It is probably easier to find the trigger with the leather cut out. Back then they would carry with the hammer over an empty chamber to prevent misfires.

Short answer is they didn't need it and were less concerned with safety as we are now. -
Try to pull the trigger, rotating the cylinder in a tight fitting leather holster.
