So I have this extra .308 lower just screaming at me to build something with it. And I already have a CMMG Mk3 that I built. What should I build? Is there something a little more interesting I could do than just another AR-10? I mean like AR-15's can be built as other calibers. So could I do something like that with this bigger lower or am I limited to the 308? I like having options....

Unfortunately the standardization that exists with AR-15s does not exist with AR10s. What works with one part may not work with another. You'll need to first figure out which "pattern" of .308 lower. There's DPMS and Armalite "pattern" lowers. Once you figure that out, you then ideally want to buy a matching "upper" in order to ensure proper fitment and performance.
Once you determine that, you should be able to buy the uppers and parts you want to build your rifle. -

The DPMS Gen 1 is not compatible with the DPMS Gen 2.

The Aero should fit, their lowers are DPMS gen I pattern and the Aero uppers fit most DPMS pattern lowers. As far as I know DPMS is the only one making and selling their gen II 308 lowers."Carpe Diem"Comment
