      That's two (or conflated) questions. Basically all have safeties. Some are automatic (when opening the action) and others are manual (must be engaged manually).

          Field guns generally have automatic safeties (safety activates when you close the action). Guns specifically for shooting sports sometimes have automatic safeties, but less so. Both my doubles have auto safeties. Older guns are all over in terms of features.

                How far back do you want to go? My oldest SxS is only about 100 years old, but it has a safety.

                I would suggest the safety became common on SxS shotguns when they went to internal hammers in the late 19th century.

                  Pretty much all guns have some kind of safety. It has to be part of the design as you can't have a gun that if it is dropped or mishandled it just goes off. There has to be a way to stop it from firing.

                  I have heard that some Single Barrel Trap guns don't have a safety because they are never closed until you are ready to shoot, and thus are safe until the action is closed.

                  Most break barrel pellet guns have auto safeties to prevent the trigger from being pulled and violently slamming the barrel closed, which can be problematic.

                      All SxS shotguns that have a safety usually have a tang safety. Below is a picture of my double rifle with the safety off (indicated by the red), shotguns are the same though might not have the indicator.

                      Basically you push the safety forward to the fire position as you shoulder the firearm. And reactivate it as you lower the firearm. Same principal as a 1911

                          Browning Citori = no auto safety.

                          Pretty much all non target specific Berettas have auto safety.

                          So it really depends.

                            I have a Beretta O/U without a safety but, it does have exposed hammers and, it's completely safe if you remove the percussion caps. Other than muzzleloaders, every shotgun I've ever seen has a safety or, at least exposed hammers that can lock on half cock.
